A great lunch box filler for kids (or big kids) or a nice treat with a cup of tea/coffee.
Simple and quick to make, you can rolled in coconut, cacao, nuts or leave them plain and eat them as is.
Ingredients – makes 16 balls
- 1 medium-size banana (best if it’s a bit overripe)
- 2 cups organic rolled oats
- 1/2 cup almonds
- 1/2 cup pecans
- 1/3 cup maple syrup
- 1 teaspoon ground cinnamon
- 1/4 teaspoon vanilla extract
- 1/4 teaspoon salt
- 2 tablespoons coconut water

Step 1: Gather your ingredients and place them into the blender.
Step 2: Turn the dial slowly on your Blender to gently bring the ingredients together.
Step 3: Keep blending until you have a good ‘cookie dough’ consistency. You might need to scrape down the sides with a spatula and use your tamper to push the mix onto the blades.
Step 4: Scrape the mixture out into a bowl.
Step 5: Set up separate bowls of ‘toppings’ (coconut, nuts, dried fruit, cacao nibs).
Step 6: Use an ice cream scoop (or spoon) to put a small measure into the palm of your hand, rub your hands in opposite directions to form a small ball.
Step 7: Drop the ball into one of your ‘topping bowls’ and cover.
Step 8: When you have ‘dusted’ all of the mixture, place in the fridge to get cold.
They will last (if you can stop eating them…hehe) for about 5-7 days in the fridge.
